Mill's Tavern Names Cara Marie Mourning Executive Chef

Industry veteran brings bold vision and deep experience to the Providence dining staple

If great restaurants have chapters, Mill's Tavern is starting an exciting new one. The beloved Providence institution has just welcomed Chef Cara Marie Mourning as its new executive chef, bringing a fresh spark of creativity to the long-standing culinary landmark.

General Manager Lesley Hall says the partnership felt like a natural fit. “We are thrilled to welcome Chef Mourning to Mill's,” Hall says. “Her bold style coupled with our shared commitment to excellence promises a unique and exquisite experience for every guest, whether they are enjoying a quick bite at the bar or a multi-course culinary journey.”

With more than 25 years of experience in the industry, Mourning brings a kitchen philosophy that blends confidence with care. She’s known for everything from classical butchery to thoughtful plant-based innovation. Her cooking is globally inspired, deeply intentional, and rooted in seasonal, locally sourced ingredients. She also prioritizes accommodating dietary preferences without sacrificing creativity or flavor.

While  the tavern’s reputation for elevated steak and seafood remains firmly in place, guests can expect new layers of expression on the plate. Mourning has a particular passion for the often-overlooked supporting players, putting as much care into accompaniments as the main event. Refined sides, inventive pairings, and an expanded selection of vegan and vegetarian options are all part of the plan.

Before taking the reins at Mill's, Mourning served as executive chef at Blu Violet inside the Aloft Hotel Providence. She’s also no stranger to the national spotlight, having competed on Hell’s Kitchen Season 24 and appeared on Food Network favorites Chopped, Beat Bobby Flay, and Beachside Brawl. A Naples, Florida native, Mourning now calls Lincoln, Rhode Island home.
